This is the most amazing curd! I was a little sceptical when I first made it as I thought 40g of fresh ginger sounded a lot. Surprisingly though it was just perfect. I've made it heaps of times now and am rather guilty to admitthat I've been known to grab a spoonful when I see the jar in the fridge quite a number of times!

Curd is just so easy to make in a Thermomix. Make sure you try out my Passionfruit Curd and my Lemon Curdrecipes too.

Lime and Ginger Curd Recipe - ThermoFun | Thermomix Recipes & Tips (2)

Ingredients

  • 40g fresh ginger, peeled and chopped into 4 pieces
  • 40g water
  • 40g lime juice
  • 60g unsalted butter
  • 100g caster sugar
  • 3 eggs

Instructions

  1. Place ginger and water into TM bowl and chop 8 sec / speed 8. Scrape down and repeat three times.
  2. Use a fine strainer and a spoon to push the juice through, collecting it into a small bowl. Keep the ginger pulp for next time fresh ginger is required.
  3. Add approx. 30g of the ginger juice, and remaining ingredients and mix 20 sec / speed 3.
  4. Cook 10 mins / 80°C / speed 2. Scrape down.
  5. Cook a further 1 min / 80°C / speed 2.
  6. Curd will thicken some more once refrigerated.

    I replaced the butter with coconut oil as I am dairy free and it worked a treat.

    Sooooo good! I doubled the recipe and cooked it for 12 + 1 minutes. I used a nut milk bag to extract the ginger juice and got enough for another double batch. Yum yum yum!

    Has anyone tried making double quantities? How did you
    Need to change the cooking time? My parents golden wedding this Saturday and I think I might make this to go with baked vanilla cheesecake

      I haven't tried doubling it Simon - but I don't see why it wouldn't work. I would suggest for this recipe stick to the suggested cooking time and check it - it may need one or two mins more but I would check first. Happy Golden Wedding to your mum and dad! Certainly a milestone these days! :)
