This is a great way to enjoy both steel-cut oats and yogurt, whether or not you use the yogurt for this parfait. The oats soften overnight in the yogurt and thicken the yogurt at the same time. Look for organic yogurt that has no thickeners or gums added to it.

- 2cups Greek-style yogurt
- ¼cup clover honey or organic sugar
- 2cups blueberries or mixed raspberries, blackberries and blueberries
- 2teaspoons freshly squeezed lime juice
- ½teaspoon balsamic vinegar
- 1tablespoon shelled pistachios, finely chopped

Heat a dry skillet over medium-high heat and add the oatmeal. Toast, stirring or shaking the pan, until the oatmeal begins to color and smell toasty. Transfer to a bowl and allow to cool. Stir into the yogurt along with 4 teaspoons of the honey or sugar, cover tightly and refrigerate overnight.

The next day, combine the berries, remaining honey or sugar, lime juice and balsamic vinegar in a medium saucepan and bring to a boil over medium heat. Cook for 5 to 10 minutes, until the liquid is reduced and the berries have cooked down to a jamlike consistency. Allow to cool. You should have about 1 cup of thick, jammy sauce.

Spoon or pipe ¼ cup of the yogurt/oatmeal mix into the bottom of each of 4 tumblers or parfait glasses. Top with 2 tablespoons of the berry sauce. Make another ¼ cup layer of yogurt on top of the berry sauce, and finish with another layer of berry sauce. Cover tightly and chill for at least 1 hour. Just before serving, sprinkle finely chopped pistachios over the top.
Tip
- Advance preparation: The assembled parfaits will hold in the refrigerator for a day. Sprinkle on the pistachios just before serving.

Not sure what "quick-cooking" steel cut oats are. Seems like an oxymoron to me. I made this with regular steel cut oats and it turned out great. The oats were chewy but not tough, and offered a nice textural contrast.

Quaker makes quick-cooking steel cut oats; they take 4 minutes at half power in the microwave. You should be able to find them next to the "old-fashioned" Quaker oats in your grocery store. They're very good.

We enjoyed this for breakfast. Skipped balsamic ( I didn’t have the chutzpah ) and made the oat:yogurt ration closer to 1:1. We liked the extra texture with the oats. Also used frozen berries and it worked well in the recipe.

It’s very light on the oatmeal so I recommend doubling the amount. I decreased the honey and it was still sweet.

I tried giving regular steel cuts a spin in the chopper. Careful not to over-toast the oats as the flavor will take over your dish. I made this mistake and the kids were not fans.
