Granola was actually one of the first recipes that I ever tried to make on my own. I was tired of shelling out the $$$ for the store-bought varieties, and also needed to use up the various almost-empty bags of nuts and seeds that I had stuffed in my pantry shelves.

The beauty of this recipe is that you can usewhatever you have on hand. In this recipe I stuck to my favorite classic ingredients – rolled oats, almonds, coconut, pumpkin seeds, walnuts, and dried cranberries. I like to sweeten my granola with maple-syrup, and keep it oil-free with the addition of a nut or seed butter. Tahini, almond butter, peanut butter or even melted coconut butter are all great choices – the drippier the better!

Once you go homemade, though, it’srealllllly hard to go back to that store-bought stuff. Not only does the flavor taste about a thousand times better, but it also makes your kitchen (and house) smell amazing.Like, why-isn’t-there-a-homemade-granola-scented-candle amazing. Heck, I would even settle for an air freshener.

THE 4 SECRETS TO PERFECT GRANOLA:

So, I’ve made a lot of granola in my life. I’ve learned a thing or two about this crunchy, clustery goodness. I’ve had my fair share of failures, but because of that, I’ve also had my fair share of successes. And I’mpretty dang sure that I’ve come up with theperfect formula for crispy, nutty, and perfectly sweet (but nottoo sweet) Granola. Every. Dang. Time.

(I’ve already shared these pro-tips in a previous blog post, but they are worth repeating. Because this is the ULTIMATE Granola recipe, friends!)

  1. PRESSthe Granola into the tray. This allows all of the ingredients to stick together more, and will create larger clusters! I like to use a large, flat spatula.
  2. Use the BOTTOM RACK of your Oven. The Granola will be closer to the heating source of your Oven, allowing it to crisp up and cook faster.
  3. A Silicone Mat takes things to the next level!I use myreusable Silicone Matsall the time in my Baking, but I especially love to use them for Granola. Parchment Paper tends to get soggy, but these mats help keep my crunchy clusters looking perfect every time!
  4. Store Your Granola in the Fridgeformaxiumumcrunch. Don’t ask me why, but it makes a huge difference!

One more thing –feel free to add whatever the heck you want to your Granola. Seriously! The only thing that really matters is that you use thesame ratio of liquid ingredients (Maple Syrup and Nut Butter) to dry ingredients. I would recommend keeping the same amount of Rolled Oats as well, but usewhatever Nuts and/or Seeds you have on hand. And feel free to switch things up with the spices too.

WAYS TO SERVE GRANOLA

I like to make my Granola alittle differentevery time, just to keep things interesting. And as for serving? The possibilities are also almost as endless! I love to enjoy my Crunchy Vegan Granola on non-dairy yogurt, smoothie bowls, with almond milk, on top of a roasted sweet potato, or by the fistful! It’s pretty much the perfect snack in my book.

This Vegan Granola recipe is easy, crunchy, healthy, and highly customizable! Enjoy these golden, nutty clusters for an easy breakfast or snack.

  • Author: Caitlin Shoemaker
  • Prep Time: 5 Minutes
  • Cook Time: 27 Minutes
  • Total Time: 32 minutes
  • Yield: ~6 cups
  • Category: Breakfast
  • Method: Oven
  • Cuisine: American
  • Diet: Vegan

Ingredients

Scale

  • 1/3 cup (80 ml) grade A maple syrup
  • 1/3 cup (~80 g) nut or seed butter*
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 2 cups (160 g) rolled oats (not instant), gluten-free if necessary
  • 1/2 cup (32 g) pumpkin seeds
  • 1/2 cup (54 g) slivered almonds
  • 1/2 cup (58 g) walnuts, chopped
  • 1/2 cup (~50 g) unsweetened coconut flakes (not shredded, it will burn)
  • 1/3 cup (40 g) dried fruit or chocolate chips of choice (Optional)

Instructions

  1. Prep: First, preheat the oven to 325F. Add the maple syrup, nut/seed butter, vanilla extract, cinnamon, and salt to the base of a large bowl. Whisk until evenly incorporated.
  2. Stir: Then, pour the oats, pumpkin seeds, almonds, walnuts, and coconut into the bowl and fold them into the wet mixture, until all pieces are evenly coated. Transfer this mixture to a greased or lined baking tray and press it into a thin, even layer using a spatula.
  3. Bake: Bake for 20 minutes on the bottom rack of the oven, then remove and use a spatula to toss/flip the granola. Return to the oven and bake for an additional 6-7 minutes, then remove.
  4. Add Fruit/Chocolate: Immediately sprinkle the dried fruit and/or chocolate chips over the granola, using a spatula to gently toss the mixture. If you’d like the chips to completely melt, stir them a bit more until they melt completely. Let the granola and chocolate cool completely on the tray before removing.
  5. Serve: Serve as desired; store leftovers at room temperature or in the refrigerator (recommended for crunchier granola) for up to one month.

Notes

  • Sweetener: Maple syrup can be substituted with another liquid sweetener of choice, like agave.
  • Nut/Seed Butter: the runnier the nut butter, the crunchier the granola! I prefer to use a smooth tahini or natural unsalted almond butter for my granola
  • Substitutions: the nuts and seeds in this granola may be substituted with any other nut or seed you have in your pantry – just be sure to use the same ratio of wet-to-dry ingredients!

FAQs

What ingredient makes granola stick together? ›

Clumpy Granola Method: Add Whole Wheat and Almond Flour

First, it adds a combo of whole wheat flour and almond flour (or almond meal), which act as a binder to hold the oat mixture together. Second is the bakeware. This recipe opts for a 9×13-inch baking pan instead of the standard rimmed sheet pan.

Why is my homemade granola not crunchy? ›

Higher temperatures can cause ingredients like nuts, seeds, and coconut to burn before the batch has a chance to properly dry out and crisp up, Perry says. Stick with a low temperature, keep an eye on your mixture, and stir it from time to time to help it brown evenly.

What is the binding agent for homemade granola? ›

Chia seeds are often praised for their binding powers. In fact, they secure ingredients so well that they can even be used as an egg replacer. Adding just a spoonful of chia seeds to your favorite granola bar recipe will make a huge difference in its texture.

What is vegan granola made of? ›

INGREDIENTS FOR HOMEMADE GRANOLA

The beauty of this recipe is that you can use whatever you have on hand. In this recipe I stuck to my favorite classic ingredients – rolled oats, almonds, coconut, pumpkin seeds, walnuts, and dried cranberries.

How to get granola to clump together? ›

You need to stir the granola as it bakes to encourage even toasting. But, about halfway through the total bake time, just let it be. As the sugars caramelize, they cause the ingredients to stick together and eventually form those oh-so-desirable clusters.

What was the downside to granola as a food? ›

On the downside, granola can be high in added sugars, hidden calories, and saturated fat, making some options less healthy.

When to add dried fruit to granola? ›

Add the dried fruit at the end.

You don't want to run the risk of burning your dried fruit in the oven, so stir it into the granola after it cools. That way, you know any dried fruit you add will be soft and chewy, not crisp. (P.S. It doesn't hurt to add a handful of chocolate chips at this stage, either!)

Should you stir granola while baking? ›

If you want a less clumpy granola, stir and then add the nuts, flaxmeal, and coconut on top of the half-baked granola. If you want a more clumpy granola, don't stir before adding the additional ingredients. Return the sheet to the oven and bake 10 minutes more until everything is lightly toasted.

What ingredient binds ingredients together? ›

Binders are any ingredient that can help a mixture hold its shape or remain bound together. Traditional binding agents include flour and eggs. The most commonly used food binder is flour.

Which flour is good for binding? ›

For a binding agent that has plenty of fiber, digestible carbohydrates, and healthy fats, check out coconut flour. It works well for people who have nut allergies as well. That said, when coconut flour is used for baking, more oil or water is added.

What is a binder ingredient? ›

More narrowly, binders are liquid or dough-like substances that harden by a chemical or physical process and bind fibres, filler powder and other particles added into it. Examples include glue, adhesive and thickening.

What is Nature Valley granola made of? ›

Ingredients: Whole Grain Oats, Sugar, Soy Protein Isolate, Canola and/or Sunflower Oil, Honey, Molasses, Rice Starch, Soy Lecithin, Baking Soda, Salt, Natural Flavor.

What makes granola not vegan? ›

The trick is that granola is often sweetened with honey or other sticky-sweet substances, which may contain many carbohydrates, making it non-vegan and unhealthy. Honey has a high viscosity and works well as a binder.

Is granola just cooked oats? ›

Oatmeal vs. Granola. The primary difference between oatmeal and granola is that oatmeal is made from whole oat grains that have been cooked at a higher temperature than usual to gelatinize the starch. Granola contains rolled oats, fruits, honey, raisins, almonds, and other components.

What binds granola bars together? ›

Natural peanut or cashew butter – It helps bind the bars together, and it adds protein, healthy fats, and irresistible nutty flavor.

How do granola bars stay together? ›

While the oats and nuts bake, you can make the sticky glue that holds our bars together. You'll melt butter, honey, and brown sugar in a saucepan and simmer until the sugar dissolves. Mix this sticky mixture with the toasted oats and nuts. Allow everything to cool, and then toss in dried fruit and chocolate chips.

What is the glue in granola bars? ›

Honey. Sweetens the granola bars and helps bind the dry ingredients together.

How to prevent granola from sticking? ›

In a large bowl, mix all ingredients (except the egg white) together and stir well. In a separate bowl, whisk the egg white until foamy and frothy. Mix into prepared granola. Spread onto a greased cookie sheet (or use a piece of parchment paper to prevent sticking).
